Carrot Cake – 2 Maids a Baking

First off, SO sorry about last week!! I was so busy I didn’t even realize it was Tuesday until noon… In fact, my hubby knew I missed last week and he just came in the house and said, “Tomorrow is 2 Maids a Baking day…” I am lucky to have him!!

I am super excited to share this post with you!! Not because carrot cake is one of my favorite cakes, because it is!! But more importantly I got to make a great friends babies 1st birthday cake!! Check out proud mommy, Meggie from Hoosier Farm Babe and her blog post about the festivities here!!

On to the recipe!

Start by grating your carrots. I actually toss them in the food processor.

In a mixing bowl add oil

sugar

and eggs.

Mix.
Add the carrots.

and vanilla.
Mix the dry ingredients.

Add mixture to the mixing bowl.

Mix.
Spray your pans, I always add a parchment circle so the cake doesn’t stick to the bottom. 

Fill your pans. I used two 8 inch pans and had some batter left over for cupcakes!

Let the cake cool and then cut the top off.

Fill the cake with your frosting. For this cake I used buttercream frosting but cream cheese icing would be great!!

Add icing to the rest of the cake.

Smooth and place in the fridge or freezer.

For this cake I wanted to make fondent flowers.

Roll the fondent out thin.

Use a cookie cuter with your favorite shape.

Cover your cake with fondent.

Smooth out the sides.
Attach the cutouts by using a little bit of water.

And your done!! Happy Birthday Ray Ray!!!

Carrot Cake:
3 cups oil
3 cups sugar
8 eggs
1 tablespoon baking soda
1 tablespoon cinnamon
2 teaspoons vanilla
1 teaspoon salt
2 teaspoons nutmeg
6 cups carrots
4 cups flour
Preheat oven to 350 degrees. In a mixing bowl mix together oil, sugar, eggs and vanilla. Add carrots. In a separate bowl mix baking soda, cinnamon, nutmeg, salt and flour. Add the dry ingredients to the mixing bowl and mix. Bake for 35 minutes or until done.

  1. This looks really good (and of course cute), and my favorite kind of carrot cake – no pineapple or nuts! But I have a challenge for you – we were in Disney and had the best Carrot cake cookies and I can’t find a really good recipe – I know you have nothing better to do than help me!!!!!

    By the way you were totally right about the martini cupcakes!

  7. I totally made carrot cake sandwich cookies a few weeks ago. Wish I’d made them with zucchini though! That is a brilliant idea. My garden is overflowing with zucchini and I am scrambling to use it.
